Even if I’m in a lazy cooking mode, I’m still picky about eating foods that are delicious and nutritious. That’s why I’ve put together easy to prepare, delicious tasting, no-bake proprietary mixes that are flexible for meeting various dietary needs. You’re in control of your sweetener of choice. You have the option of reducing or completely substituting the sweetener and using coconut oils to cut back on your sugar intake if that’s what suits you best.
Soft & Chewy Protein Bar Mix is a favorite with kids! Who doesn’t like peanut butter and honey!? This mix is flexible. If peanuts are a dietary issue, use another seed or nut butters. You can also cut back on the honey and use some coconut oil for lower sugar intake. We like to point out this blend contain milk – if dairy’s a no-no, you’ll need opt for SuperSEED.

Besides our Soft & Chewy Bar Mix, you will need
- Honey
- Peanut Butter – or other nut butters, such as almond or Sunflower Butter
- Chocolate Chips (mini chocolate chips work best for the protein balls, any type of melting chocolate for the Buckeyes – we like dark chocolate best)
A Better Buckeye Recipe
(Our recipe has WAY-LESS sugar than traditional)
Prepare HoneyNUT Bar Mix recipe as instructed on package by using 1/2 cup of Peanut Butter and 1/2 cup of Honey to contents of 1-package. (You can substitute almond butter or non-sweet sunflower butter for dietary preference.) Blend together.
- Scoop out mixture with 1/2 Tablespoon
- Roll into 1″ balls – Press a toothpick into the top of each ball
- Place on wax papered cookie sheet or dish that will fit in your freezer
- Chill in freezer for at about 30-minutes or until firm.
- While chilling:
- Melt 1 cups of semisweet chocolate chips in double boiler (Or microwave in bowl at medium power for one to two minutes)
- Stir chocolate chips until smooth
- Dip chilled Hempelicious Balls in chocolate while holding on to the toothpick; Leave a small portion of the peanut butter showing at the top, to make them LOOK like a Buckeye.
- Put back on the cookie sheet, then refrigerate or freeze until ready to serve.
Yields approximately 48 to 50 x 1″ balls (about 12g each), servings size of 3 pieces provided 7g of protein.
Make it Simple!
Super Delicious Chocolate HoneyNUT Protein Balls
Add 1/2 cup of Mini Semisweet Chocolate Chips to recipe as instructed on package. (We love dark chocolate).
Mix 1/2 cup of Peanut Butter and 1/2 cup of Honey to contents of 1-package. Stir until well blended. It will be crumbly like a pie crust. Scoop out 1/2 Tablespoon of mixture from bowl and roll by hand into 1″ bite-size balls. Chill and serve.
Yields about 56 to 58 x 1″ balls.
TIME SAVER: If you don’t want to bother with making the balls, you can always press the mixture into an 8 x 8 pan and cut into 2” x 2” squares – or desired size.
